Last week I decided to skip menu planning. The week before I had strep throat and last weekend I had a stomach virus. Between not feeling well, the excessive heat, the 4th of July and a few days of vacation I decided we’d wing it. Of course winging it meant a lot of eating but sometimes a girl’s got to do what a girl’s got to do!
For the 4th of July we attended a barbecue where I made my Bacon Wrapped Wieners and these Orange Marmalade Cupcakes. The cupcakes were exceptionally tasty. According to my son they are one of his favorites.
This week is pretty hectic. Mike is working a second shift plus the weekend, I have a meeting one evening and Belle is working a couple of nights. It’s going to be a stretch to get all of us sitting down for more than two meals but I’ll at least be cooking so there’s something to eat in the house.
Brats, watermelon, corn on the cob (yeah! it’s done early this year), roasted potatoes
Hamburgers, grilled pineapple, watermelon
Rotisserie chicken (picked up from the store), mashed potatoes, glazed carrots, salad
Pulled pork sandwiches ( from the freezer), applesauce, salad
Fend for yourself x2
