Weekly Menu

Another week, another menu plan.  The little wrinkle this week (there’s always a wrinkle, isn’t there?) is that I’m going to be gone all week on business.  When I asked Mike what he would like me to prep for the week his answer was “just leave money and I’ll get take out all week”.  Obviously he didn’t get the “cut down on eating out memo”.

I could have just left money for take-out (and I’m sure there will be more take out than I’d like).  However that wouldn’t make for a good menu post would it?  I also feel like it’s my job as a mom to make sure that my family has some decent food to eat.  Whether or not they choose to eat it is up to them.

When I know I’m going to be gone I try to make sure that we do family dinner the nights that I’m home.  This week we’ll have two family dinners.  I also made some potato soup and beer bread (my friend Andi’s recipe) today which I made the kids eat with me for lunch.

I did have to chuckle about a little exchange Mike and I had via e-mail while he was at work.  Here it is

Mike – Dinner ?

Me – Spaghetti

Mike – Don’t burn the meatballs

Geez – one time you overcook the meatballs and you never hear the end of it.  The meatballs are in the oven right now as I’m typing, I really do hope that I don’t burn them!

My menu for the week is pretty simple meals that I can prep and the family can heat up and serve.  The first two dinners are our sit down dinners, there’s usually left overs for them to eat for fend for yourself night or lunch.

I’m betting that instead of warming up the taco meat and having the taco buffet they’ll use that for another take-out night.  Since I’m not home thought I”m not going to worry about.

    So glad that I’m not the only one who can burn meatballs! LOL. Stopping by from Menu Plan Monday! :)

    LOL, about the meatballs, I am never allowed to make homemade chocolate pudding ever again just because 8 years ago I made it, served it in beautiful bowls, oh and I had burnt it. So that first mouthful tasted like burnt ash. They never forget the cooking mistakes.
