Do you ever have those weeks where you end up accomplishing nothing that you planned to get done? That’s pretty much what happened this past week. As a reminder, here’s what my goals were:
- Car shopping for Belle
- Write – I’d like to get some posts in the hopper
- Clean out basement closet
- Start organizing storage room
The only thing that I managed to accomplish (from my planned goals) was to write some posts. The only reason that got done was I wanted an excuse to sit on my hinder and not feel guilty
I’ve said this before (and I’ll probably say it every week!), I need to go with the flow. While I think it’s important to plan on things you want to get done, it’s equally important to realize that things will happen that prevent you from accomplishing your planned items. If it’s not a critical goal, why beat yourself up?
At our Labor Day cook out last week, my mother-in-law gave me a bag of apples from her tree. The apples had some brown spots so I figured that sometime during the week I’d just make a batch of applesauce, no big deal. Tuesday night I received an email from the farm where we get our CSA letting us know that they’d be delivering 10 lbs of plums that week as part of our fruit share. 10 lbs of plums!?! I had never eaten a plum before so I really had no clue what to do with that many plums. To really send me into panic mode, my friend Lynn sent me an email telling me she was on vacation and I should take her 10 lbs of plums. That left me with 20 lbs of plums! (on a side note – I had my first plum ever in my life and all I can say is I LOVE PLUMS!)
To top it off, when I was driving Belle to work on Saturday she let me know that her and her friend Katy made plans for us (the girls and the moms) to go shopping that night when she got off work. After spending a full day in the kitchen I was now expected to spend hours in the mall traipsing around looking for a homecoming dress. Ugh!
Given that I now had a large bag of apples and 20 lbs of plums to deal with I decided to turn my organizing weekend into a freezer cooking weekend. Of course, I needed to find some plum recipes first.
Here is what I managed to get done during my freezer cooking session:
- White chicken chili (1 batch)
- 3 meat chili (1 batch)
- Freezer plum jelly (it was soooo easy! – I’ll be sharing the recipe this week)
- Frozen plums (I put up about 7 bags – we’ll use these in protein bars, yogurt, smoothies, etc)
- Vodka infused plums (yeah – I’m not sure what I’m going to do with these but they sure sounded good!)
- Homemade applesauce (2 batches)
- Frozen tomatoes (We received a bunch in our CSA box and I knew we wouldn’t be able to eat them all)
- Plum cupcakes
On the car front we did find and make an offer on a car. However, the dealer wanted $2,000 over the KBB excellent dealer price. I wasn’t going to pay that much over blue book and the dealer felt the car was worth more than what I was willing to pay so we didn’t get the deal done. I had planned to shop more Saturday morning before I started my freezer cooking session but a torrential rain storm messed up those plans!
Here’s my goal for the upcoming week. I have a Chick meeting tonight, plus we have a wedding and a birthday party this weekend so I’m keeping it simple.
