It’s been a few weeks since I’ve posted my menu. Life has been so crazy around here that we haven’t been eating “real” meals. It’s been pretty much grab what you can, I don’t think that’s very inspiring 🙂
The grocery bill has been a focus of mine lately. a couple of weeks ago we had a few rough weeks where we were way over budget. Even though I haven’t been cooking full meals, we’ve been trying not to eat out a lot so we buy easy to prepare food. One of my favorites lately (that’s I’ll be sharing later this week) is antipasto. It’s basically a plate of meat, cheese, fruit, crackers. Good news is that we’ve been staying in the grocery budget while also staying in the eating out budget. Not to bad! Of course, it would be better if we were able to lower our grocery budget substantially.
With the exception of this evening, we won’t be together for a family meal the rest of the week. My menu is based on simple to prepare and reheat meals to deal with the comings and goings of the family.
Grilled Chicken Strawberry Salad (this is pretty much my strawberry salad with grilled chicken added. To keep it simple I’ll usually pick up a rotisserie chicken)
