I’ve been a little frustrated with menu planning lately. I put together a great plan but usually have some problems with the execution. Last Sunday, while Mike was at work, I put a nice meal on the table. When he works we eat at 6pm. At 5:50 I went to wake up Belle (she’s had a crazy busy schedule and was catching a nap) with little success. I decided to let her sleep until Mike walked in the door. 6pm came and went. 6:15 came and went. Finally at 6:30 I got a call that there was an incident at work (I already figured that out!) and he wouldn’t be home until late. I ended up sitting at my nicely set table and ate dinner by myself.
Another one of my meal plans that went south was a chicken salad. I bought the rotisserie chicken, made the dressing and pulled the salad out of the fridge only to discover the salad was bad. We ended up eating the rotisserie chicken by itself without any sides or bread. Ugh! We ended the week with more take-out than I planned.
Sometimes in life we need to give ourselves grace. While we women like to think we can do it all, we can’t. Fortunately I have a husband who doesn’t mind take-out :). With our schedules this week, there really isn’t going to be a whole lot of cooking going on in my house.
Here’s what I’m planning:
Take-out from our favorite gyro place. I’ve been busting butt around the house all day while Mike worked a 12 hour shift. Gyros on the couch sounds like a good plan to me!
