Weekly Menu and Goals

'Finished strong!' The Chicks and I at my first 5K – the Sole Burner in Appleton over the weekend!

 Good Morning!  I hope everyone had a great weekend.  Mother’s Day can be a mixed bag of happiness for those who have mothers and/or children to celebrate and a really hard day for those suffering from loss.  It was certainly a day for me to reflect on how fortunate I am to have our moms in our lives as well as two great kids.  Life changes on a dime, I took the day to cherish them and let them know how much I love them.

Last week was a pretty great week.  When I wrote my menu I forgot that Mike and I had dinner plans at a swanky restaurantwith a supplier.  All I can say is yum!  We had a fantastic evening with good company and excellent food.  Best part about it – didn’t cost us a dime 🙂

We also went to Outback on Friday before grocery shopping using a gift card we had received from Christmas.  Another excellent dinner with minimal spend, my favorite kind of dinner!

Our Plated box contained some real jewels this week. I really enjoyed the Herb Encrusted Cod  while Mike absolutely loved the Steak Fajitas.  In fact, he loved them so much that they’re making an encore this week.  I can’t wait to share the recipe with you, my plan it to get it up on Wednesday.

For Mother’s Day I had my parents and kids over for dinner.  Since Mike had to work and I did the cooking I kept it pretty easy and served brats, fresh fruit and some veggies so I didn’t have to spend the day slaving away over the stove.

Weekly Goals

Here are the goals for this week:

1. Be healthier, more relaxed and strengthen our marriage

  • Continue to monitor my blood pressure daily
  • Walk three times
  • Have dinner ready and waiting for Mike 4 times
  • Walk my first 5K

2. Improve our financial state – long term I’d like to be able to live on one salary

  • Change our phone plan – Did not get a chance to do this

3. Grow Wonder Woman I’m Not

  • Post three more times – was able to get two posts up plus a submission to Money Saving Mom
  • Prep pictures for future posts

4. Houshold

  • Clean and organize the office – Why do I have such a problem doing this?

Here are the goals for this week:

1. Be healthier, more relaxed and strengthen our marriage

  • Have dinner ready and waiting for Mike 4 times
  • Practice one random act of kindness

2. Improve our financial state – long term I’d like to be able to live on one salary

  • Change our phone plan

3. Grow Wonder Woman I’m Not

  • Post two more times
  • Write one additional post for the following week

4. Houshold

  • Clean and organize the office

  1. Nice to hear you had a good Mother’s Day. Mother’s Day for me is a hard day. I miss the get togethers that we used to have with my great grandma, my grandma and my mom on Mother’s Day. They are all gone now and I’m the only mom. My sister doesn’t have kids and my Dad’s wife never had children of her own and they spend the day with her mom. It’s very different than I pictured my life at this stage.

    But we make the most of it with a special breakfast and making bouquets from the roses from our garden to take to the cemetery. It was a beautiful day here, so I really can complain.

    All the items on your menu look delicious this week. I hope you have a good week!

    • Shelly – sorry it took so long to respond. I’m sorry that Mother’s Day isn’t what you would wish it to be. This was the first Mother’s Day since my grandma passed so it was a hard day for my mom too. I don’t think we ever get to old to need our mamas. All we really can do is make the best of it and hug our kids tights. Hugs to you!
