What an absolutely stunning weekend!  Dare we hope that spring is actually here?  I spent most of the day yesterday in the kitchen but did spend some time outside, soaking up the sun while doing some writing.

It’s been a couple of weeks since I’ve posted my weekly menu.  Unfortunately a few weeks ago I came down with the flu and was out of commission for over a week.  It’s been two weeks since I’ve “recovered” and I’m still hacking up a lung at times.  I’m definitely on the mend but the cough just won’t let go.  Given that all my energy was going into keeping the house afloat, I skipped my menu planning.

I’ve been taking a photography class.  Saturday we went hiking in a ravine.  The area was stunningly beautiful but I’m a hurting unit right now.  In addition to the hiking, I spent a lot of time on my feet.  My back and knees have taken a beating and I need to skip my yoga class I’ve been trying to take Mondays.

Other than being down for the count, not much is going on here in the WWIN household.  I was feeling ambitious this weekend so  I decided to swap out my winter clothes for my summer clothes (crossing my fingers I won’t need my boots any more this year!) and spring cleaned the master bedroom.  I ordered a new comforter and sheet set for my bed and I wanted everything fresh for when it comes later this week.

Friday night, Mike let me know he not only needed a boatload of cupcakes but that he also needed to make enough pulled chicken to feed 25 people.  I wouldn’t be quite truthful if I said I wasn’t a bit perturbed.  Making 6 dozen cupcakes (I told him I wouldn’t make the usual 10 dozen) and “whipping” up that much pulled chicken takes quite a bit of time.

We are skipping our Plated.com boxes for a few weeks while we try to eat up some food from the pantry and freezer so nothing overly exciting this week 🙂

  1. oh, lamb burgers! I’m looking forward to reading that recipe! Grilled brats sounds really good too. Now that the weather is getting so pretty I’ll have to add that to the menu sometime soon.
