Weekly Menu – W/O 4-24-2016

weekly menu planning

What happened to last week’s beautiful weather?  This weekend’s cold, wet and rainy weather foiled my plans for sitting outside and frying my fish.  Definitely not a good day to be doing that!  Hopefully one of the days this week will be more conducive to sitting outside.

I mentioned last week that I bought new bedding for the master bedroom.  It came and I absolutely love it!  It’s very similar to what I had before but it is slightly different and it’s A LOT fresher!  I’ve had the same comforter set for almost 10 years so it was probably time 🙂

I have found that having a calm, restful master bedroom that makes me happy is relaxing and allows me to sleep better.  One of my must haves in the bedroom is my diffuser.  Misting a pleasant, calming smell throughout my bedroom makes me happy.  This isn’t the exact diffuser that I have but it’s very similar (affiliate link).  Personally, I don’t use any of the ambience lights, I just want the smell.  Before getting the diffuser I would light a candle at night but since the diffuser has an automatic shut-off I thought that would be safe.

Saturday I was suppose to drive up by Door County to do a photo shoot at a waterfall for my class.  However, my knee is giving me quite a bit of grief and my allergies are acting up so jI didn’t go with the group on Saturday and instead on Sunday I went around (in the rain) and took some pictures.  My last class is tonight and I have to present some of my pictures.  Belle was quite impressed when she saw them.  Of course, I think I took thousands of pictures to get a few that I thought would do 🙂

Trees at EAA

Wild flower at Omro

Although slow, I’ve been making strides on where I want to take my online presence.  Next up is to get some of these printed out and start selling them on Etsy.

Oh yeah – we also planted a peach tree this week.  Belle got some extra credit for planting a tree since it was Earth Day this week.  I’m not a huge peach fan but I’m a bit excited about eating them fresh off the tree.  Hopefully it will survive the frigid winters.  We bought one with blooms already on it.  I can’t wait until it’s big, I love flowering trees!

Menu planning this week has been a challenge and a little uninspired..  I really am missing our Plated.com meals (I’ve stopped them for a few weeks so we can go through some food in the pantry/freezer) and am looking forward to getting them again.  We’ll probably start back up the end of May.

Mike called me last night from work to find out what was for dinner.  I don’t think I’ve ever heard the disappointment over baked chicken in his voice that I heard last night.  Oh well, at least he had food!

I also have a frozen chicken/pasta/vegetable thing that I made at a Wild Tree Party last year.  I’m thinking it’s time to pull that out and make it just to add a little variety to this weeks menu.  And so I don’t have it staring at me every time I open the freezer door!

Spinach & Mushroom Frittata Recipe

Breakfast Frittatas – Mike surprised me and made these for the week while I took a nap.  What a great guy!

Blueberry Muffin

Blueberry Muffins – I decided to up the ante and have some blueberry muffins this week to grab with our frittatas.  Methinks it’s time for a new picture!

That’s it for me!  What are you serving?  For more recipe ideas be sure and check out my Recipe Index.
