Weekly Menu – Week of May 15 2016

Welcome to another week!  I am spending the week in beautiful Cincinnati!  I arrived yesterday and have already had some marvelous food.  That’s the way I like to start of the week!

I went through Minneapolis and had a bit of a layover so I had breakfast at the French Meadow Bakery.  Yum!  My biggest complaint about the place was that the pancakes were as big of as the plate and I could only eat half.  Given that I only had gotten about two hours of sleep the night before I was hoping that the carbs would put me in a food coma for the flight but alas it was not to be.  Two hours up in the air in uncomfortable seats without a wink of sleep in sight.  Oh well.

After a full day of traveling with very little sleep, I decided to spend the afternoon in my hotel room sleeping instead of exploring the city (I know – I’m a slug but I needed to be on my game for work last night).  On my way up to the room I stopped by the market and grabbed myself some lox and bagel.  First stop eating it, not quite sure if I’ll go back again.  The capers that they had included drew me in but I think I got stiffed on the cream cheese.  Probably would have been better with a little bit of the good stuff to smear on top.

Menu planning for the family when I’m not going to be home is a bit tough.  I want to make sure they have plenty of food, but it typically needs to be pretty easy stuff.  Sometimes when I travel I have time to pre-cook a bunch of food for them.  This time, since I left on Sunday I didn’t have time to do any cooking so they are pretty much on their own.

Some of my female colleagues give me some grief about even worrying about what my family will eat while I’m gone.  After all, they’re pretty much self-sufficient adults.  Here’s the thing though, making sure my family is well taken care of is one of the ways that I show them I love them.  Yes, in the event that I just can’t plan they will survive.  However, when I can pave the way a bit for them I like to do so.  It also eases my guilt over my seared sea scallops at McCormick and Schmicks which totally melted in my mouth!

Brats on the Grill

Brats – at Mike’s request I bought two packages so this is probably going to be one of their go-to meals.  They’ll eat it with salad, potatoes and a vegetable.

Hamburgers – No picture for this one but I like to buy pre-formed patties.  I put a bit of Worcestershire sauce and some salt and pepper.

Leftover Chicken Recipes

The ever present Baked Chicken.  Of course, they’ll prolong the leftovers with these options. I did pull some of Granny’s Cranberry Relish  out of the freezer for  them to have with the chicken.
